A few weeks ago my sister Alexis (who is an amazing cook) came to visit from Utah! While here she threw together this delicious salad which is super fresh, healthy and delicious, so I wanted to share it with you all!
Directions: Roast the corn and asparagus on a baking sheet with a little olive oil and salt for 10 minutes, let cool to touch. Cut corn off the cob and asparagus into bite size pieces, put on top of arugula. Chop and pit cherries, throw on top of salad. Sprinkle feta cheese on top and toss with dressing!
