
This is a great recipe for when you are craving take-out but want a healthier option! Ingredients 8 ounces cooked whole wheat spaghetti 21/2 cups coleslaw mix (found in produce isle, with cabbage and shredded carrots) 3/4 cup cilantro 3/4 cup chopped salted roasted peanuts Optional add-in, Cup of shredded rotisserie chicken Dressing 1/4 cup soy sauce Tablespoon rice wine vinegar 2 teaspoons lime juice 2 teaspoons honey Teaspoon minced fresh ginger Garlic clove minced
Whisk together all of the dressing ingredients together and combine with remaining ingredients(noodles, coleslaw, etc.) in a large bowl. Serve at room temp or refrigerate for later. Enjoy! (Adapted from 100 Days of Real Food)
