
Strawberry Quinoa Salad~ What’s better than fresh strawberries to top off your greens? This salad is light and refreshing, and will hit the spot on a hot summer day! All you need is one cup of cooked quinoa, 2 cups of cut up strawberries, 2 stalks of celery chopped, 3 cups of arugula, half a cup of chopped parsley, a few handfuls of almonds, and shaved pecorino cheese to top it off! For the dressing, drizzle some balsamic reduction (the Alessi brand is my personal favorite) and olive oil to coat!
