
Veggie Corn Chowder!! Not the best looking photo I know but my kids both love this soup! It gets some veggies in them and makes me feel like a better mother! I got the recipe from 100 Days of Real Food which I Love!! 3 tablespoons butter 2 tablespoons whole wheat flour 1 medium onion, diced 3 large carrots diced 3 large celery stalks, diced 3 cups corn kernels, fresh or frozen Teaspoon salt and pepper to taste 2 cups chicken broth 2 cups milk Melt the butter and whisk in the flour to make a roux. Add the veggies and cook and stir for 5-6 minutes until softened. Add the corn, salt and pepper stir for 2 more minutes. Pour in broth and milk, bring to a boil and simmer for 10 minutes until thickened. Last step is to put half the soup in a blender and purée and return to pot, or if you have a hand held immersion blender even better! It’s a quick and easy weeknight meal:)
